Raspberry Muffins


Hello lovelies, love cooking and all but I find baking more therapeutic. I usually bake when I’m feeling low, or angry I just find the process of creating something so soothing. When I made these muffins I was having one of those days, where you are not feeling happy but you are feeing sad either, and I love being happy and cheerful, so to change my mood around I baked! Makes 12


25og plain flour

1tbsp baking powder

1 tbsp. vanilla extract

105g caster sugar

75g soft butter

1 egg

175ml milk

170g raspberries

(12 muffin cases)


1.Preheat your oven195 degrees. In a mixing bowl add you flour, baking, sugar. Give it a little mix with  fork, so all the ingredients are fully combined. Then add in your butter, with the fork mix in all the ingredients again till the all the flour is coating the butter and appear to be a crumby texture.

2. Then in a separate jug beat your egg in your mil and add in your vanilla extract. Then pour your milk mixture into the mixing bowl, and stir with a fork, not too much though the mixture should still be lumpy.

3. Gently fold in your raspberries, and place the mixture in to your muffin cases and place in the oven for 20-25 mins. and you are done :)
