Tuna Stuffed Avocado

Hello Lovveeliieesss!!!! I’m back! Oh my goodness its been too long, but by looking at the new blog I hope you’ve seen why I’ve been away. Anyway, I thought my first blog post would be something healthy because I know quite a lot people have entered 2016 determined to eat right, or to lose those extra pounds. This side dish is suitable for these people because not only is it delicious, but it has good fats, protein, vitamins so its really just the perfect all round dish, oh and did I mention that its super easy to make? Makes 2 Avocado Halves

Ingredients:

1 Avocado (Halved)

120g Tuna Chunks

1/2 Chopped Red Pepper

1 Tbsp Lemon Juice

1 Tsp Chilli Flakes

Handful Chopped Parsley

Salt&Pepper

Method:

  1. With spoon scrape some (not all) avocado out of both the avocado halves. And place the scraped avocado in a bowl.
  2. With a fork mash the avocado till its in chunks.
  3. In the same bowl add the tuna, pepper, lemon juice, flakes, parsley and salt and pepper, and mix with a fork,
  4. Then spoon the tuna mixture into the avocado bowl. And you are done :)
