On to day two of the back to uni series! Now, it wouldn’t be right if this series didn’t have noodles. Most uni students are guilty of getting home and bunging in a pot noodle in the microwave, but we are going to put an end to this today!!! The second meal of this week is a noodle stir fry, it cost me £4.85 only. But I know tight things can get at uni with money so this meal can be even cheaper of you have it with out the beef, that will cost you £2.85 and with this meal taking 15mins say bye bye to pot noodles!! In this recipe I have used a shop bought stir fry sauce for all my food lovers they will think this is shameful but just remember I’m cooking on a budget here, so for today please forgive me! (I bought all my ingredients from Tesco, so others shops may vary in price )
1 teaspoon oil
300g Fresh Egg noodles
1/2 Red, Green, Yellow Pepper
200g Beef Strips
80g Sweet Chilli Stir Fry Sauce
1. Slice your peppers into strips.
2. In a wok heat your oil then fry your beef for 2 mins then add your peppers and fry for a further 4 minutes.
3. Add in your noodles, and further fry for 2 mins fully combining all the vegetables with the noodles. Then add in your stir fry sauce.
4. Fry for about 4 mins and your are done
