Poached Egg & Spinach…

Good morning my lovlies. Just a quick post before I head to work. Today for breakfast I had a poached egg and spinach muffin. A pretty healthy start to the day in just under 5 minutes. Serves One

Ingredients:

1 egg

Handful of spinach

1 Muffin

1 tbsp of white wine vinegar

Salt and pepper

Method:

1. Sice the muffin in half, place the the spinach on the muffin.

2. In a saucepan (preferably a round one) pour in water till it fills the top then add salt and vinegar. Then place it on a medium to high heat. After about 5 mins when the water is hot, with the handle of a wooden spoon go round in circles in the water creating a vortex. Then add in you egg. Keep it in there for 1 min 30 secs then take it out.

3. Place the egg on the Bed of spinach. And you are done :)
